Recipe idea

I have found a recipe that sounds absolutely delish!!!! And it gets better because it's from a blog that I absolutely love!!! Her name is Cait and her blog is ABicycleBuiltfor2. You need to check out her blog!!! Like, right now- go! But come back so you can read my idea and tell me what you think :)

Alright, the recipe is Oatmeal Pancakes. Here's the picture. 

I'm thinking of making oatmeal muffins????? Don't know exactly how, but does that sound good? We aren't taking squishy or mushy instant oatmeal but fluffy muffins. Maybe with ginger, nutmeg and molasses????? Dunno yet. Thoughts?????

Radio Silence

Once again, I am realizing that I haven't blogged about anything in a while. To put it simply, life has been busy. How busy? Well... before bed tonight, I've still got to make my lunch for tomorrow and check the washing machine (I think there's laundry in it, but I'm not sure... scary) and while this alone isn't much, I always end up doing waaaay more stuff than I set out to do before bed. Sigh. I need to change that one, it's not me best habit.

Anyway, life has been busy. We are finally moved into our new apartment and we LOVE it!!! We are still in the process of making it look and feel "homey" but the truth is that home is where ever we are together so it doesn't really matter if there's stuff on the walls or curtains in the windows. However, we are in the process of painting, hanging art on the walls and putting curtains in the windows just because we like it that way. :) To be honest, we are liking these little projects. It's fun to put our own stamp on our new place and make it "ours".

Over these past few months, we have also been adjusting. Well, actually we've been doing that for nearly a year now. It all started when we got married (a year in less than a month!!!) cuz let's face it, marriage is wonderful but it is a life changing event. We survived my second to last semester of college, made it though a CRAZY hot summer and then the Husband went back to school while working full time and I went to work full time while I was in school. In December, I graduated with my BALS (Bachelor of Arts in Liberal Studies) with a concentration in Judaic (that would be Jewish) studies, and we moved into our new apartment (the day after graduation to be exact).

As we are walking through these life changes (marriage, school, job), I have found myself realizing that there is a lot of stuff that people don't tell you about growing up. No one tells you that you should pack ear plugs for your honeymoon in case one of you snores. No one tells you that you will randomly start crying for silly little reasons because you're exhausted after putting in an 80+hr week. No one tells you that making the switch from full time student to full time working professional is difficult.

To be honest, that last one has been the hardest for me these past few months. When you are a student, you don't really do the exact same thing 5 days of the week, it's usually Monday and Wednesday of Tuesday and Thursday, etc that have the same schedule. I now go to the same place 5 days a week for the same time. While this sounds like a "no duh" statement, it's a strange shift for someone who is coming out of college. Please understand, I'm not complaining. I am very grateful for my job and I know how blessed I am to have one, but this knowledge does not make the transition easy. I'm not sure that anything can really make the transition easy, I think it's just something each of us must walk through and process on our own.

I will admit, my processing of this hasn't been particularly graceful. I'm so very, very thankful to have a supportive husband, family and friends as I walk through all of this. It has not been easy and I don't think it is finished yet (I was in college for 4.5 years and didn't get used to it in 6 months) but I am finding ways to adjust and deal with officially being a responsible and productive member of society.

Wow... ok, sorry this blog post is so "humbug". In other news, a few of the ways I am learning to adjust to life change is to... reorganize my kitchen. Random, I know but it makes some thing easier and that makes everything easier. The next step of this process involves labeling all of my clear acrylic containers so that I'm not the only one who knows what's in it. Also, I am learning to sew with the sewing machine from my wonderful in-laws!

Please note: my camera is NOT red. I love the color red but I have an aversion to oddly colored objects like cameras, kitchen and laundry appliances, etc. My camera is black. If you have a red or other colored camera, not offense is intended, this is purely my preference. :) 

Whew, I'm sure you're tried of reading this which is why I am about to go make my lunch for tomorrow. I hope your life is in less of a state of change than mine is currently. But if it's not, how are you dealing with it all? And if your life isn't changing quite as rapidly, what are some hobbies you are doing currently????

Oh! And I have been doing my Project 52- with pictures! Posts coming soon, so far so good and very yummy!!!!

The Return of Menu Monday

Well, it's Monday and this means a return of Menu Mondays! Yes, I know you are all anxious to see what I'm planning to cook up for dinner this week... then again, you probably aren't but I believe in sharing so I'm gonna share my menu for this week with you anyway! :)

Monday: Homemade spaghetti and meatballs (with homemade sauce, my FAVORITE part! Actually, I just love that my kitchen and the rest of our apartment smells like an Italian kitchen!)

Tuesday: Slow Cooker Beef Stroganoff with egg noodles

Wednesday: Italian Beef Sandwiches with Nanny's Baked Italian Tomatoes (New tomato recipe from Hubby's grandmother and oh-my-gosh it's AMAZING!!!! I don't particularly eat tomatoes but I could eat these all the time! Super simple. Super yummy. Super fast and super cheap. That all makes it a keeper!)

Thursday: Slow Cooked Juicy Chicken with rice Pilaf and broccoli (roasted or sautéed) Note: I will make 2x as much as I need because I will be using 1/2 of it for my chicken quesadillas later in the week.

Friday: Lasagna with salad (and this is a store bought lasagna, folks. It's easier and really cost effective. And I had a coupon.)

Saturday: Chicken Quesadillas (using our second 1/2 of the juicy chicken) with salsa and black beans

Sunday: ????? Right now, I'm not sure what we will eat on Sunday night. To be honest, it might be macaroni and cheese.  Then again, it could be something else from earlier in the week.

Our schedule this week is really open to changing very quickly and it is possible that some of these meals won't actually get cooked or eaten this week. As usual, there is also a definite possibility/likelihood that meals will get switched around. I don't believe in having a schedule so ridged that you can't change things up if needed.

Hope this week's menu inspires you to cook up something yummy that makes you smile one of those big-I'm-so-content smiles :)

Confessions of a Foodie

Ok, so in case you haven't noticed, I'm a foodie... or at least a wanna-be foodie. I love food and not just the eating part although that is fun too. I actually love cooking and creating fun, yumminess with food. Food is flexible, which means you can change things around and alter/create pretty much whatever you want/like and I LOVE that! I am getting to the point that while I'm constantly looking for new recipes I don't always follow them to the letter, particularly when it's the recipe for something I've made several times before.

I said that I would post recipes for a few dishes that I've made recently and that's what this post is about: recipes!
1. Tex-Mex Rice
2. Enchiladas
3. Ravioli Sauce
4. Chocolate pie
{No. 3 and 4 are per special request } 

1. Tex-Mex Rice 

You will need: 
~ 1 cup uncooked long grain rice
~1 medium onion, chopped
~2 Tablespoons vegetable oil
~2 cups boiling water
~ 1 medium green bell pepper, chopped
~ 1 and 1/2 teaspoons chili powder
~ 1 teaspoon salt
~ 1 can (14ish oz) diced tomatoes, drained {if you wanted to make it hotter you could use Rotel}

In a large skillet, saure the rice and onion in the oil until the rice is browned and the onion is nice and tender {and turning translucent}. Stir in the boiling water, green bell pepper, chili powder and salt. Bring the yumminess to a boil and once the boil is reached reduce the heat to a simmer and cover for about 15 minutes or until the rice is tender. Once the rice is tender and yummy, stir in the tomatoes {or Rotel} and heat them through. Time to eat! This is what it looks like when finished:

2. Enchiladas

You will need: 
~1 lb of ground beef {or turkey or whatever if you are being health conscious}
~1 medium onion, chopped
~1 can enchilada sauce {red}
~1 clove of garlic, minced
~1 {4oz} can of diced green chillies
~6-8 large {8in} flour tortillas
~3 cups {at least} Sharp/medium/whatever kind you like shredded cheese
~1/2 cup chopped green onion {garnish, optional}

Cook the meat, onion and garlic in a pan/dutch oven until the meat is no longer pink and drain off the excess fat {I have also been known on occasion to rinse the meat a little to remove a bit more of the grease/fatty goodness, but that is optional}. While the mean is cooking {aka before the draining of the fatty goodness} begin to heat the enchilada sauce in a medium sauce pan on the stove. Once the sauce is heated and the meat,onion and garlic mixture is all cooked, you can begin to assemble the enchiladas. Assembly works best on a cookie sheet {my hubby usually does this part, although I'm not sure why}. Coat each tortilla in a little bit of sauce and down the center of each layer a little bit of meat, some green chillies and cheese; fold the sides of each over like you would a soft taco and place it in a greased 13x9 inch baking dish that has a little bit of sauce on the bottom. Repeat the filling and placing of the tortillas {single layer} until you are out of tortillas, the pan is full or you don't have any meat left. Now, take the remaining sauce and pour it over the top of the enchiladas. The last pre-baking step is perhaps the most important: pile the rest of the cheese on the top of the sauce coated enchiladas! {We are firm believer that you can't have too much cheese so we use more than I've actually included for the recipe, but use as much or as little as you like}. Once you have covered everything in cheesy goodness, pop it in the oven at 350 for about 30 minutes, just till the sauce and cheese are bubbly and melted. Top with chopped green onions and serve with Tex-Mex Rice and black beans. :)

3. Ravioli Sauce

You will need: 
~1/4 cup butter
~1/4 cup flour
~1/4 teaspoon slat
~1/4 teaspoon ground nutmeg
~2 cups milk 
~1/4 cups white wine or vegetable broth 
~1/2 cup minced fresh basil 
~1cup shredded mozzarella cheese
~1/4 cup grated parmesan cheese
~2-1/2 cups marinara or spaghetti sauce

Melt the butter over low/medium low in a large sauce pan. Once the butter is melted whisk in the flour slowly, making sure there are no clumps. The roux should be thick but smooth and not lumpy/clumpy. Stir in the salt and nutmeg and slowly add the milk and wine. Bring the mixture to a boil and allow it to cook for about a minute or until it has all thickened nicely. Remove the mixture from the heat and stir in the basil, mozzarella and parmesan cheese and marinara sauce. That's it! You're done! Well, you're done with the sauce now you just need to add it to some cooked pasta. I poured it over ravioli and it was amazing but honestly I think it would be great over almost any kind of pasta. {Sorry, no picture here folks. When I make it again I will try and take a picture.} This is a recipe is part of a larger recipe from Taste of Home. 

{make sure it is the REAL DEAL! Under NO CIRCUMSTANCES are you to use a butter substitute, it will not work right. Trust me, I know from experience. In most cases it doesn't matter but this will be used to make a roux and if you use margarine then your roux will not thicken properly.}

4. Chocolate Cream Pie 

*this is the Vanilla Cream Pie recipe, it is the base for several others*
You will need: 
~1 cup sugar
~1/2 cup all-purpose flour or 1/4 cup of cornstarch 
~1/4 teaspoon salt
~3 cups milk
~4 eggs 
~3 teaspoons of butter or margarine 
~1-1/2 teaspoon of vanilla
~1 9-inch baked pastry shell 

For the filling, combine the sugar, flour/cornstarch and salt in a medium saucepan over medium heat. Gradually stir in the milk and cook the mixture over medium heat until thick and bubbly. Reduce the heat and cook, stirring for 2 minutes. Remove the pan from the heat. In a separate bowl, separate the egg yokes from the egg whites. Beat the yokes slightly and gradually stir 1 cup of the hot mixture into the egg yokes. Return the egg mixture to the saucepan. Gently boil. Cook and stir the mixture for about 2 minutes. Remove the pan from the heat. Stir in the butter and vanilla. Pour filling into pie shell and bake at 350 for 12-15 minutes. Cool at room temperature and then chill for several hours before serving. 

To make it Light Chocolate: 
Decrease the sugar for  3/4 cup and add 3 oz. of chopped semi-sweet chocolate with the milk. 

To make it Dark Chocolate: 
Increase the sugar to 1-1/4 cup and add 3 oz. of chopped unsweetened chocolate with the milk. 

From Better Homes and Gardens cookbook from 25 years ago. I only mention the publication date because it differs slightly from the current edition, which I haven't tried yet.

Dinner is served!

I'm sure I've mentioned this before and I'm pretty sure that I will mention it again, but here it is: I love to cook! Cooking makes me happy. Here are some recent meals/ pictures of dishes that the Hubby and I have created. 
No. 1 All-American

I wasn't a big fan of Mexican food until about a year or so ago. It just wasn't something that my family ate growing up. We would eat tacos and the occasional frozen "Mexican" thing-a-ma-bober from the store, but that was it. Since dating/marrying the Hubby I have developed a taste for some Mexican foods.  The rice recipe is super easy and VERY economical (Read: cheap!). I like to stretch my dollar as far as I can and I really like it when I can make something from scratch that stretches me dollar. I'm not a big fan of preservatives, additives, and other all around yucky stuff. I feel like most of the foods I like aren't that difficult to make and with millions of recipes out there I'm bound to find one that I like or that I can doctor so that I like it. That's the beauty of food- the only rule is to make sure it doesn't kill you. I also feel like most foods that are full of gunk can be easily made without all the gunk and that they will taste better.  Hence, the reason that I prefer to "DIY it" than "prepackage it". 

{Note: I am by no means against junk food... It's just not worth the trouble or possible to make some things (ie: snack food) but for full meals I prefer to do things myself. It's relaxing. It gives me a sense of accomplishment. It makes me smile. I'm also not against all prepackaged foods, believe you me, I use them but I try to not over use them b/c of all the gunk in them and b/c they cost a small fortune!}

I promise to post recipes soon. In the mean time, here's something the think on. My enchilada recipe is a spin-off of my mother-in-law's and The Pioneer Woman's recipe. I love the Pioneer Woman's recipes! You need her book. You need her emails. Promise. My friend, Anna told me to get Pioneer Woman's book and that I'd love it- she was right. And now I'm telling you. Get the book- you'll be so glad you did!
